We have an outbuilding on the property with an old garage (with an extra room next to it) that we don't use/won't be using. Considering converting it for the above use for our son, but it needs to be soundproofed to avoid driving the neighbors insane (not everyone likes hard rock).. Additionally, there's the issue with acoustics...

You can do some of it yourself. A lot depends on how many decibels are to be produced and how close it is to the neighbors. Building completely soundproof is troublesome but it is definitely possible. If English works well, there is plenty of info at:
