If you want to put up a thin metal sign on a rough wall, say a basement wall, would you choose a super-duper double-sided tape whose adhesive residues are a nightmare to remove the day the sign is taken down? Or would you perhaps choose some quick-grip adhesive?

Depending on how large the sign is, pl adhesive or some sealant/silicone type, relatively easy to cut away later with a thin thread.
Biltema's double-sided tape sticks like a ROCK, I can assure you, yet it's relatively painless to remove. Highly recommended!
