We are in the process of renovating the lower floor of our split-level house. I've learned that you should use breathable materials for the interior of the exterior walls that are below ground. For example, plaster and then paint with breathable paint. Are there any other alternatives?

What about the exterior walls that are entirely above ground? Is it okay to place drywall directly against them? The house has a light concrete frame that is then additionally insulated with brick. Drainage was done quite recently.

Surely someone here has plastered/spackled/drywalled their basement walls?!

applying plaster directly can cause problems (moisture). You can set studs, preferably metal. Then the boards should preferably not touch either the floor or the ceiling.
plastering is nice too. and have a color that you say breathes.
filling is possible but do not use regular wall filler (board filler)
