Started removing old tiles (backsplash) to prepare for installing a new kitchen. Unfortunately, quite a bit comes off with the tiles, and I would therefore need to "restore" the wall with a new surface layer. I won't be tiling again on the material, as the new backsplash will be a stone slab. Are there any recommendations for what material I can "patch" with?

If you're just going to fill an existing hole, then regular mortar/plaster mortar is preferable. Like weber murbruk B or C.
