Is it safe to remove the beam carefully? Or will everything come crashing down?

I wouldn't remove it permanently, possibly to replace it. It must be replaced with something that supports the canopy.
Otherwise, you just have to take down what is above and rebuild it anew.
In other words, you can remove the slanted ugly beam as long as you replace it with something else that supports the masonry? Like a sturdy iron beam 20 cm higher up so you don't hit your head when leaning over the wood stove?
