I have searched quite a bit but can't find exactly what I'm looking for. We like natural materials and in our upcoming sunroom, we want to have light smooth wood paneling on the walls and ceiling. It seems like you see a lot of pictures of it, but can't find what to buy when you actually start looking.

What you are linking to is probably regular tongue and groove exterior cladding with a whitewash, which usually looks good. You can also use råspont 20x120, but they don't have any phase on them. It is then suitable to take double-rebated tongue and groove exterior cladding, which is available in widths up to 170.
 
Seen that many recommend Byggmax pine flooring as respont can be very moist. Plywood can also work, and it brings the price down significantly.
 
There is a scarcity of standard panels that work as you wish. Everything used must be dried thoroughly, so floorboards can work. Still, it's good to have a small bevel next to the tongue and groove that mitigates the effect of the boards slightly separating. I often find myself in situations where it is necessary to custom order a panel based on my own design. This can be done at a custom joinery, but it usually becomes quite expensive when you need dry and knot-free timber. Pine plywood is an interesting alternative. With a good base in the form of battens or similar, it can be chosen quite thin. Both panel and plywood require great precision during installation (plus good screws, trim screws with small heads usually work best for panels) to ensure the end result is good.
 
Check with Baseco they have some nice panels for indoor use and Sveden trä also has panel.
