What length should the drywall screw be if you're screwing 13mm plasterboard?
I've also heard that you should start fastening the drywall in the middle of the sheet to avoid gaps between the sheets, is that correct?
 
30 mm screws are sufficient.
There is no reason to have longer ones. If the board experiences high stress, the board will crack before the screw is pulled out anyway.

I screw the edges first so the board stays up, then I "fill in." A tenth of a millimeter here or there doesn't matter; it will be plastered anyway.
 
I start with some screws in the middle first, then I know that the board is really against the beam there. Otherwise, there's a risk that there will be a small bump in the middle; starting in the middle "smooths" the board out towards the edges. (Just like when you put on a sticker without getting air bubbles).
 
I agree with btgarb above.
The primary thing is not to screw the sides first and then the middle. There is always a small risk that the boards are slightly bent, and to minimize the risk, you should screw from the middle outwards, alternatively from one side to the other.

The screw length should be the board + about 20 mm for wood studs and + about 10 mm for steel.
