Theoretically you can do that, but keep in mind that "sten" supports more weight. Also, you avoid problems with rotting rules, moisture, etc. with a stone wall.

You can put something under the floor joist so it's not directly against the concrete. Or a steel stud instead of a masonry wall works just as well.
