We are planning to furnish the attic and are considering having it open up to the ridge. But maybe that only works if you have a large room? How else can you have interior walls when you have two bedrooms, a family room, and a bathroom in the attic? If anyone has pictures, that would be great.
 
Are the interior walls being built all the way up to the ceiling..?
 
So the interior walls connect to the sloping roof? Does anyone have a picture of this?
 
Well, all 1 1/2 storey houses have a wall against a sloped ceiling.

It is perfectly fine to install internal walls with a sloped ceiling. I have a room with almost 4m to the ridge where I installed a longitudinal internal wall and one transverse. Built the wall as usual (lying on the floor though) and placed angled fill pieces on top of the horizontal beam against the ceiling.

Possibly, one should consider that higher walls become more wobbly, so it might be possible to increase the stud dimensions or ensure that a wall connects transversely. It might not be a problem if you don't choose 45x45 and make a 4 m high wall spanning the entire width.
