We have just torn down the rooms that will become our new kitchen. Also tore down the ceiling, i.e., chipboard and insulation, so now we have exposed roof trusses.
Now we have many thoughts on how to proceed with insulation, and I would like to have as much as possible visible and airy.
However, the craftsman wants to put gypsum right over the lower beam, whereas I want the insulation under the ridge. The roof truss timber has dimensions of 6" * 1.5".
Do you have any ideas or opinions?

In part of our house, the ceiling is about 6 meters high. We wanted to maximize the height as much as possible, so we made sloped ceilings on the sides and a flat ceiling in the middle. We had a collar beam that we built the new ceiling against. There is still some work left, as seen in the picture, planning to enclose the rafters so it becomes a thick beam instead, and then stain it black/dark brown.
