I messed up when we installed the tile baseboard; forgot to account for the door casing. I originally thought there wouldn't be any casing there, but my wife thought otherwise...

Cutting the baseboard afterward is out of the question. Risk of damaging the moisture barrier, etc.

The casing is too thin to rout out. The baseboard is barely a cm thick. I have started installing small moldings to fill the gap, but before I finish, I wanted to see if anyone has a better tip?

Another idea was to cut MDF in the same size as the casing instead of these moldings, but the right thickness wasn't available when I went to the building supply store.

Then the risk of water on the floor isn't that big...
Then I probably would have done as you already planned. If you paint the trim and list in the same color, it won't show... It will surely turn out perfect.
 
A tip could be to place foderklossar above the tile baseboard to create a more natural "start" for the door trim.
