The ventilation pipe from the kitchen fan should be insulated with fireproof mat. How on earth do you do it when it has to go through the vapor barrier?

Sure, you can wrap a layer of plastic right at the passage and attach it there, but the whole fireproof mat becomes a leaky opening for moisture to get through.

Or am I just being a typical overly meticulous DIYer who is worried about this at all?
 
So, from a fire protection standpoint, is it acceptable that the vapor barrier is situated (or in this case the collar) as a layer through the fire insulation?
The pipe collar should, if I understand correctly, only be placed over the pipe, not over the pipe wrapped in insulation?
 
That's right, the collar is heat-resistant and flexible, so it won't melt like the vapor barrier plastic would if you connected it directly to the pipe. Just be aware that you should put on the collar before installing the pipe.... then connect the vapor barrier to the collar with tape as usual.

It's the same principle for modular chimneys, so if you're naturally worried, you can surely buy a collar for chimneys that can withstand even higher temperatures :-)
