I have installed a conservatory set/sliding glass doors in our old conservatory. The lower track on which the sliding doors run has a gap between the track and the concrete slab due to level differences. The gap goes from 5 mm and increases to 20-25 mm . I would like to put a white strip preferably in rubber or some material that can withstand the outdoor climate. I have looked around but can't find anything suitable, so I hope for some good suggestions from the forum :D

Can you remove the track and level it with filler/cast where the bottom track is, then seal with construction sealant? I think it's otherwise difficult to seal against 25mm of pressing water and snow that settles against it in the winter.
Doesn't the track flex when you have such a gap underneath?

Form both sides and cast again with expanding fine concrete.
