I have ripped up the carpet from this old staircase. What do I do now to get a nice staircase?
I would have liked to sand the wood on the sides and keep the wood, but unfortunately, I accidentally scraped off parts of the wood when trying to remove the remnants of the carpet, so that's unfortunately not possible.
My only idea now is to sand everything, paint the sides white, and apply vinyl on the top of the steps.
Other thoughts and advice are gratefully received!

You can sand it anyway. If it is slightly uneven here and there, it doesn't matter because no one other than you will notice. It's not visibly disturbing.

I don't follow what you mean. Exactly what do you mean by "sides"?

Carpet, fits excellently on stairs. It dampens footstep noise and prevents slipping.
