I'm going to repoint the interior brick wall in my kitchen, but since the bricks aren't even, I'm wondering how I should repoint it.

Some bricks stick out a bit more than others, should I then repoint at an angle and repoint straight where the bricks are even?

My tip: mount 2 thin wooden battens that you have aligned so they are straight on both sides of the surface you want to plaster. You need to mount them so no brick protrudes. Then just apply the plaster and scrape it off with a straightedge.

Now I think Toker78 should not plaster but grout and keep a visible brick wall.

I would have grouted at an angle, but I'm not a pro.
 
Of course, I'll grout... so I’m testing grouting at an angle as you wrote "nimhed". Maybe it'll be best this way, otherwise it might look strange.

But the response from "meckis" was also good because now I don't have to ask the next question I had. It’s because I plan to put a glass pane between the countertop and the upper cabinets and wallpaper behind it. So I need to smooth the area behind it. The tip from "meckis" seemed like a good solution to that problem.
