Fine-toothed saw usually works well. Also works with a dull knife.
 
A slightly used hand saw also does the job. If you want to be more sure of a straight cut, secure a straightedge to saw after.

The combination of a knife and a fine-toothed saw is good. First cut on both sides and then saw 2 mm outside the cut, so it doesn't fray with as much paper.
 
Score with a knife and then prop up the board with the short piece against a support - then hit along the score - done.

As mentioned, the finest cut is achieved with a regular saw, preferably an old one since plaster ruins the sharpness of the saw!

Plunge saw with rail. There are those who make a living manufacturing blades...
