I was wondering if you have any tips/advice on how to handle the water connection in the wall of the garage. The outer wall is insulated and covered in plastic, and I have added a 45*45 on top to create an installation wall. This is where the incoming water will be, between the plastic and OSB. There will be some kind of Y-connection here to route to an outdoor faucet and then on to a water heater before reaching a sink.
Would you run everything in or on the wall?

Then you should be able to angle it out from the wall as best as you can. Then a T-pipe for the water outlet, then continue towards the heater. If it is 12mm internally, I guess it is 18mm externally. Best regards
If you intend to run the pipes concealed, it works if you use "prisolrör" and bend these at the connection points with a good "prisol" pipe bender, resulting in a short radius bend. I think it gets cramped in the wall for a bending fixture, for example, for PEX 15x2.5 piping. It works if the outlet is between the studs where the construction plastic is most pliable.
Since there weren't many pipes to be run on the wall, I thought exposed pipes would have worked.

My first thought was to have them in the wall, but I'm not quite sure how I would solve the first joint, hence my first post. And I was also thinking of using PEX all the way.
Whether it will be tight or not, I can't visualize, as I don't have direct knowledge in this and will have to measure and see. Bending fixture, is that one of those ready-made bends for PEX tubing?
