Hello.

We are going to build a short wall and want brick on both sides with (100mm?) insulation (foam polystyrene) in between.

How do you do it? Two half-brick walls? Is there any connection between the two walls, for stability's sake, even though it creates a thermal bridge?

It is called an isolated cavity wall what you want to do. It consists of two half-brick walls that are connected at regular intervals with wall ties (copper or stainless) that are mortared into the joints. Polystyrene is not very good as an insulating material because it is too rigid. It is better with mineral wool of a type with high density.
