Last summer I built a shed for my father.
In early autumn, I built double doors out of tongue-and-groove panel wood.
They fit with a margin, but during the later autumn and winter, the doors have swollen so that when opened, they no longer fit as well in the opening.
I will have to adjust this when time permits, like sawing them smaller, but how do you avoid this so you know for the future?
 
I think the only solution is to adjust the margins further, until the doors don't pinch in the largest position.

The key is that the movement is minimal in the wood's grain direction. The construction should utilize this so that the critical dimensions are minimally affected and there is room for movement where needed.

I copied another door he has on another part of the storage (I did an extension).
Those doors are, however, 50 years old :)
