Hi, I have removed a couple of interior walls and now have a ceiling with substantial "tracks" from the wall studs. How can I best remove these? It appears to be a concrete ceiling and the tracks are about 1 cm deep.

I am grateful for any tips!

You can tap down the edges that are too high compared to the surrounding surface, then fill the gap with plaster which you then sand and paint. You need to repaint the entire ceiling if you want it to look nice...

Just one more question...do I need to have some kind of "strip" in the plaster to prevent it from cracking?

No, it won't be useful since it's concrete..
If it's, for example, plasterboard, then it would have been appropriate..
