Does anyone know of other handmade play structures? I'm thinking of building one myself for the countryside... need inspiration.

That boat was really nice. I think you should just build something big and fort-like and let the children be involved in developing it, and it'll definitely be something they will want to play with afterwards.

What you build FOR children doesn't always work.
4 pallets and a roofing sheet they found themselves can create a den that lasts an entire summer.

Unfortunately, I have that experience.
