Most sources say that decking should be installed with a "happy face," meaning the heartwood facing up.

However, I placed a piece in water just to see how much it would swell. But I also see that it warps the "wrong" way. That is, if I place this board with a "happy face," water will stand on it.

I've added a couple of pictures for clarity, so the gap is visible.

What is your advice? For example, evaluate each board individually, etc.?

Thanks. Do you mean aesthetically the nicest or that I place it in the way I think it will cup? That is, look at tendencies in which direction it pulls?
