We want to hang a large swing (a cocoon in rattan) from the ceiling. The house is in Italy and is hundreds of years old. The apartment is located under the roof (no attic), so the ceiling beams are visible, with battens and tiles on top. The swing is intended for use by adults, so it must hold at least 100 kg.

How should one hang hooks etc., so that the ceiling holds?

The beams are about 20 cm wide and 30 cm high, probably in chestnut, as it has been used in old mines nearby.

The beam construction must have a margin to withstand a load of 100 kg. If you suspect that the ceiling might collapse due to this load, it might not be suitable to hang up the swing.
 
Pre-drill and insert a sturdy screw eye/trapeze hook - done

Or put a round sling around the beam, then you won't cause any damage at all, and can move the swing as you please.
A lifting sling for wrapping around beams, allowing non-invasive suspension like a swing.
