Now we are almost done with the garage. The electricity will be installed today, and next week the garage door will arrive. :D

This weekend I plan to start putting up drywall. There were some drywall sheets left over from the house that the carpenters left behind. My plan was to use these for the garage, but when I started looking at the builders' merchants for more sheets, I became unsure. The sheets I have are 9 mm thick, but the standard seems to be 13 mm.

The walls consist of wooden studs and I will insert about 12 cm of insulation. On the outside are windproof paper and a wooden facade. We won't be installing heating initially, but I would like it to be prepared in case we might want to maintain above-freezing temperatures in the storage area in the future.

Based on these circumstances: Can I use the drywall sheets I have, or should I buy thicker ones? :-?

It's probably outdoor plasterboard you have then. It should be more resistant to moisture and cold than regular plasterboard. However, the walls will be a bit more "flexible" and not as strong for mounting shelves, etc. on.

Exterior gypsum boards are usually 9 mm thick. Is that with or without beveling on the long sides for joint compound?

I would not choose drywall in a garage. Drywall is good as it offers some protection against fire, however, it is difficult to attach or lean heavier items against it. Additionally, it does not withstand water and moisture well. I would probably prefer OSB or something similar, and supplement with a cement fiberboard if protection against sparks is needed.

Why not put up OSB and drywall on top. And then it should be possible to use the leftover outdoor gypsum boards.
Is it harder to finish outdoor gypsum?, e.g. painting.

Sure, if you have the studs ready, then for heaven's sake, put up OSB+gypsum. The outdoor gypsum has a surface treated with something (wax?) which is supposed to make it more resistant to moisture. This might possibly make it harder to paint, but I don't think it's a big problem. Just give it a try.
