Can I put plasterboard directly on a concrete wall? (Kitchen wall) Or should I consider something else? I was mostly thinking about moisture and fire risk?

Maybe I'm way off base?

Are you sure it's a concrete wall? I find it hard to imagine that there would be moisture or fire issues with a concrete wall. Gypsum is often used as fire-protective cladding. If the wall is a plastered brick wall, such as a chimney breast, one should be a bit cautious; otherwise, I don't see any other problems besides the difficulty of attaching the gypsum. It's easier if you first put up battens.
 
I glued renovation plasterboard directly onto the concrete wall in the staircase. Turned out great.

Completely sure that it's concrete. I have a gas stove next to that wall, hence my uncertainty about gypsum board. But maybe it does not play a significant role at all? Should I also put some protective mat between the gypsum and concrete?
 
Gluing the plaster directly to the concrete, as TotalControl suggests, should normally be the easiest way. However, I don't think bare plasterboard is a suitable material behind a stove. In that case, you should cover the board with tiles near the stove.
 
There is fireproof plasterboard. But tiles on top of it are a must - otherwise, it won't stay clean.
