A few more questions.
1: Will the plaster be thick enough to stay in place as I don't have anything to press it against?
2: Will it adhere properly to both sides of the gap, or should the sides be treated with something adhesive?

When you mix it, you should achieve a consistency that sticks on the spatula. Take a dollop on the spatula, turn it upside down and shake it slightly; if the plaster remains attached, you have a good consistency. Plaster adheres well to plasterboards and it doesn't swell either, so as you apply it, it will be just right!
