How is it usually done?
The way I learned it.
1: Install furring strips on the ceiling (extra furring strips where needed for interior wall studs).
2: Frame the interior walls.
3: Install drywall on the ceiling and then put OSB and drywall on the interior walls.
Or is it done in a different order nowadays?

But I'm involved in a construction project where the carpenters want to drywall the ceiling first and then frame the interior walls; my concern is that it must be difficult to attach the studs that go in the same direction as the furring strips if they don't line up with them.

sparse paneling and drywall the ceiling first with extra sparse where needed for the walls

Is there something that becomes easier or better when you plaster the ceiling first?

easier to plaster the ceiling and probably less waste than if you have interior walls in the way
