I have a question about floor chipboard. Some say that today's floor chipboard doesn't need to have the joint centered on a beam. How can I tell the difference between such a board and an "old" one? This sounds perfect for me since the rafters and beams didn't quite end up where they should have...

Check the manufacturer's instructions that should be available at the building supply store. Bauhaus sold (perhaps still sells?) boards that can withstand joints between studs and they were not significantly more expensive than other flooring chipboard.
