In the wall by our basement stairs, there is a smaller triangular section about 120 x 60 cm. It is covered with several smaller plywood boards that I want to remove. Behind these are boards with insulation behind them. There are fairly large gaps between the boards, up to 1 cm. Is it a good idea to fill these, and if so, with what?

The idea is that everything will then be painted. There will also be a new trim on top of the boards.

Replace the boards with 13 mm drywall, it can handle cavities up to 1 cm without problems. You can also drywall the top side if you provide support for it on the wall, between the beams that are visible protruding.
If the corner is exposed, attach a corner bead to it so that it doesn't get damaged.
