Planning to craft my own fake boards from 1-inch planks or something. Then stain them to get an authentic feel.

What kind of boards should it be to get the right feel with the stain?
Should it be rough-sawn boards or something else?

If you use a planed board, or alternatively the planed side, you should be prepared for traces from the cutter to be visible, i.e., parallel tracks from the planer blades. The alternative is the sawn side; if you're fussy, it might catch a bit more dust and dirt on the surface. I myself clad a double 45*195 with regular boards 22*195, with the planed side facing outward. The joints between the different boards, and the sections where the cutter tracks were clearly visible, I fixed with a hand plane. It looks a bit less like a hack job that way. Then I glazed it with a brown facade stain.
 
We have installed faux beams on the ceiling in the recreation room. My dear husband carved the edges of the boards, somewhat irregularly, like leaving more around knots. Then I stained them with a dark brown glaze. It turned out really well.
 
I would place the rough surface outward to achieve a rustic feel.
Try to find older timber if possible, like used exterior paneling or similar, which can be turned inside out.
