Yep, we've reached the critical point (with the wife):), we're discussing ceilings for our house construction next year. It's between drywall panels or smooth drywall ceilings, but we're leaning towards smooth ceilings. The only question is whether we should hire a painter to plaster the ceiling or not. Is a painter interested in plastering regular standard drywall on the ceiling where I've beveled the short sides myself, or do they only want to plaster real ceiling drywall? /see pictures if you're wondering which drywall I mean.

"Real" ceiling gypsum with milled edges is only if you want visible lines. Otherwise, I always use regular wall gypsum that is beveled at the short ends.
 
You seem to mean gypsum that is recessed even on the short sides. I've never seen such boards, but heard they exist.

I think they are still quite uncommon. The result is likely to be better with this new board type, but most people are probably satisfied with regular boards. There is inevitably a certain bump where the seam tape is spackled on the short sides. In a normal situation, you don't see this bump.
