We are wondering what order to start plastering? Plaster the ceiling against the vapor barrier first or plaster the outer and inner walls first? Shows pictures of our upper floor that we are building.

I would definitely plaster the ceiling first. Less risk of damaging it when you do the walls than vice versa.

Yes, the ceiling first. Also, you can lift the board to the wall so that it comes tight against the ceiling if you are not going to have a ceiling trim. Also, you get 13mm around the ceiling that you can play with if the walls are slightly out of angle.

No ceiling molding it will be.

My husband says the opposite. What is really true?

Start with the ceiling. If you start with the walls, you need millimeter precision on the panels in all directions since you have fixed measurements on all four sides. However, if you start with the ceiling, you always let the gypsum board be 1 cm shorter in length toward the floor, and then you can easily fit it against the walls and ceiling, which isn't always necessary.
