How soon do you think I can lay the parquet?
Considering that the parquet needs to sit for 24-48 hours to acclimatize before installation, it seems that temperature and humidity are quite important, so I might need to reach reasonable levels before I can proceed? If we were laying tiles, we would have started after 2-3 days, but I don't want to lay a relatively dense underlayment foam directly on the compound if it hasn't dried properly.

If we were laying tiles, we would have started after 2-3 days, but I don't want to place a relatively dense underlay foam directly on the leveling compound if it hasn't completely dried.

I hope you haven't placed the parquet in the humid environment for acclimatization?
Each manufacturer of leveling compound has different drying times listed on their product sheet, rely on that and wait an extra day.
Don't forget to place 0.2mm age-resistant plastic directly on the leveling compound and then foam and parquet.

The room feels quite humid, but it's not excessively humid when I look. I set up a hygrometer and it's down to ~55% now. So it seems to be drying fairly quickly. We did the leveling compound 48 hours ago.

Yes, it's usually used whenever there's concrete or similar underneath, a fairly cheap assurance that the parquet won't be damaged by moisture if you ask me..
