I have received clearance from the chimney sweep to connect a wood stove to the flue in my kitchen. (Pressure tested and approved)
The problem is that the channel to be used, from the kitchen's side, is located a bit inside the flue (about 300 mm). The question is how best to "drill" through to the channel. I have a fairly good idea of where the channel is in the flue. What should I drill with? Is there a risk of "damaging" the channel when I drill? The wood stove has a 125 mm connection. :x

127mm diamond core sounds like an excellent choice (provided it's brick) but is it solid brick all the way through or are you going through another (unused) pipe? 127mm is extremely large even if it works with a heavy-duty drill with a safety clutch.
Another option is to chisel your way through with some form of hammer, like an electric or pneumatic one. It worked for me, at least, to knock a hole in a layer of bricks for a soot hatch and such. You might need to repair some joints afterwards with a bit of mortar, but that's relatively easy to do.
