I am going to install chipboard flooring in the bathroom.
You should leave about 1cm against the wall.
I'm wondering if I should cut off the tongue and groove against the walls or leave them as they are?
I will level it with self-leveling compound afterward.
 
Why save 1cm? Risk that the leveling compound will flow down there...
 
It is to allow for movement when the floor expands and contracts because it is wood. Seal with something that can be removed later.
 
Does tightly screwed floor chipboard really move that much?

I was thinking of applying a soft sealant like the cheapest sealant from Bauhaus or Byggmax.
I considered using foam sealant but maybe it's too inelastic?
It's difficult to seal with something that can be removed later, it will be difficult after the leveling compound...
 
Consider EPS concrete instead of chipboard. It becomes stable and does not move. We poured it in our bathroom, and it worked really smoothly.
 
In the bathroom, I first laid floorboards with a 10 mm gap to the wall. I seem to recall that I sawed off the tongue against the wall. Then gypsum (13mm) was added to the walls, and it was convenient to apply a sealant between the gypsum and the floorboards to prevent the leveling compound from filling the entire joist system :)
