Hello!
We have put up beadboard in the hallway and therefore need a slightly wider ceiling molding than the narrow trim that was there before. We have chosen a cove molding (which of course also needs to be painted):

Beadboard paneling with a newly installed cove molding on a hallway ceiling, part of a DIY renovation project.

On one of the walls, however, the water pipes run - how do we handle this in the most attractive way?

Pine panel wall with two vertical water pipes, next to a door frame; ceiling with molding visible.

You build a small box with two holes for the pipes that you glue to the ceiling. Plywood or MDF is preferable. The cove moulding meets the box either directly or you create two outer corners.
