I have a question on how to replace pressure-treated joists with a concrete slab.

Pouring a slab:
Removing all the decking, styrofoam, and joists in the middle of the floor is easy. But how do you prepare to pour a slab under windows and sliding doors? Or can the pressure-treated joists standing on piers remain as a frame around the slab?

Attached are two pictures of the current construction and the entire sunroom in hopes of a response.

(We have also considered making a crawl space with subfloor panels, but it is a risky construction since there is such a small distance from the ground to the subfloor panels.)
