The first post on the forum is about a concrete staircase I have in my little cottage. Concrete hat and concrete staircase, two unpleasantly hard things.
To the point, as you can see in the pictures, the entire veranda roof will be removed and replaced, and the concrete staircase will be extended 1.4m to the right.
My questions, therefore, are how I should proceed. It should be said that I am a rookie in this area. But I have cast a well lid once upon a time.

The size of the extension is 1.4x1.1x0.65. It is only the top part of the porch I am going to extend, with no steps.
I was planning to use concrete. It will be about a cubic meter. First, I suppose I'll need to remove the top layer of grass as I understand and fill in with gravel. Can I then fill out with boulders so that I don't need as much concrete? After all, I'm going to hand mix the concrete.

Can I use coarse concrete first and then the top layer with a bit finer concrete so that it feels a bit nicer to walk on?

I have made a wooden framework that goes along the edge and on the side, but then I thought the concrete should rest against the old porch foundation and the house foundation. Will there be gaps or something when placing it against existing concrete?

As mentioned, I will be using new posts for the roof. Do I need to place any "plinth iron" (unsure of the term here) in the concrete when I cast, or can I drill them in later?

Many questions but thanks in advance to all concrete professionals.
