I will be moving into an old skånelänga in the middle of February.
There are framed drywall walls that need to be taken down in the living room.
How is it best to plaster the clay brick walls that are underneath?

Good choice to remove the gypsum! The clay brick absorbs water from the foundation stones, which then evaporates 10-15 cm up in the clay brick due to the heat and gets trapped between the gypsum and the brick... risk of mold.
The most optimal choice is to plaster with clay (lerklining).
Next on the list should be lime mortar and maybe some mesh.
Then probably modern c-mortar and mesh. It shouldn't be harder than that.

I'm considering building up thin Leca blocks and then plastering with a lime mortar. The wooden studs that are currently in place have started to rot from the bottom. A bad idea from the start...

After removing all the masonite/gypsum, we sprayed C-bruk on our clay brick/brick walls. Used some mesh where needed, but the entire "plastering" was mostly to ensure everything held together.
For insulation, we placed a steel stud framework with a bit of air gap against the stone wall, and then insulation within this steel framework. To prevent the insulation from falling out into the gap, we had some steel perforated strips between the steel studs.
Additionally, we also poured a new indoor slab...

I read in a book from Gysinge about clay plastering (Building Conservation in Practice by Göran Gudmunsson) and found a couple of reasons:
* Clay plastering is somewhat more elastic
* The same materials work best together, i.e., do not crack as easily
* Cheap, + any old material can be reused
There is also a detailed description of how to do it and it doesn't seem too difficult!
