Hello. We are considering installing a stove in our house and my question is whether we have to extend the chimney to the ridge or if there are other rules. The chimney goes down quite far, so I think it looks rather silly with such a long chimney.

Yes, you CAN avoid going above the ridge height IF it is a pellet stove, otherwise it is 1 meter above the roof penetration and at least up to the ridge.

Talk to your chimney sweep about what they believe should apply in your case.
 
For the best draft, you should go above the ridge. I recall that certain fireplaces may be set 0.75 cm above the ridge if they are not primarily used for heating. Otherwise, the normal rule is 1 m above the ridge. However, keep in mind that if you go over 1.2 m above the ridge, there are higher requirements for safety/accessibility around the chimney (for cleaning).

You probably confuse ridge and roof.
The rule says 1 meter above the roof. However, at least OVER the ridge.
