Isn't there a place where you can see what the board consists of? Maybe at a pipe outlet or by a list you can see what kind of material it is. Otherwise, maybe try drilling in some suspicious spot or where there is already something mounted.
 
The panels are probably gypsum, treetex, or masonite, but it doesn't really matter what the material is. You want to replace them, so they're coming down. Most likely, they're nailed into furring strips or something similar. Hardly glued.

For a new ceiling, you can choose Huntonit or beveled gypsum ceiling panels, for example. Quite easy to install. Huntonit becomes a finished ceiling right away. Gypsum requires you to fill the screw holes and then paint the panels. You can also create an entirely smooth gypsum ceiling with "regular" gypsum boards, but that requires more spackling work.

You need to take down the current ceiling before you can determine if you need to reframe the ceiling before installing a new surface.

Hopefully they are nailed, even if no nails are visible...but they are not nailed in a sparse panel but in the raw boards that I can see from above the loft. I guess I'll try to pry one loose to start with.
