In one of our outbuildings, there is a root cellar where I'm thinking of replacing the ceiling because it is damaged by rot. Above the root cellar is a loft used for cold storage. I have torn up the ceiling and removed all the sawdust and the old ceiling. The sawdust was damp on the lower part, closest to the ceiling, and the ceiling was very rotten. However, the floor of the loft is in prime condition.

What do you think about this reconstruction?
1) Reinforce with more support beams
2) Insulate with mineral wool and leave an air gap against the loft's floor.
3) Install a vapor barrier against the insulation
4) Mount outdoor gypsum boards as the inner ceiling.

Or should the air gap be against the gypsum? It's hard to determine what constitutes the warm and cold side.

The root cellar was made in the 1950s and has two ventilation holes, one placed low that goes up and out through a pipe and the other vent is placed high on the opposite diagonal side. The house is next to a large rock, so a lot of water drains along the house, but that will be resolved separately and later.
