We want to complete the panel in a bathroom we are renovating. The house is from 1924 and the panel is partly in pretty bad condition and needs to be replaced. I've been searching for double-sided tongue and groove in the dimensions 17x75 at all hardware stores, but it seems impossible. Does anyone know where I can find such a thing?

I would say that you should try to find a smaller sawmill/planing mill that can take care of it for you. Alternatively, a happy amateur with the right gear, if it's just a few dozen meters it can be milled with simpler tools. I bought here at a local sawmill 20 years ago, but the sawmill was sold and the machines exported abroad.

Unfortunately, it is not a stock item, so it probably involves a base price and then per meter, so if you don't need many meters, it becomes quite expensive. If you need larger quantities, the base cost is spread over many running meters. I looked into this when we extended and wanted the same moldings that already existed, but it became a cost we didn't prioritize, and I had to solve it another way.
