I have a stove that is built-in with lightweight concrete and will be covered with faux brick, but I need to move the surface forward a bit, so I thought about gluing on a plasterboard and I'm wondering if that would work.

Yes, why not?
Glue it to a gypsum board where you want.
But there probably needs to be some air between the stove and the wall behind it.
Or the wall to the side. What does it say in the stove's installation instructions?

The stove has lightweight concrete around it and is not in contact with anything except air, and all 4 sides (installed between the kitchen and VR) are cold even though a fire is going, but I was mostly thinking about all the regulations and the chimney sweep who will cause trouble.

Might need minerit board instead of regular gypsum, but check with the chimney sweep as mentioned. Much more fun to know how to do it beforehand than afterwards
