I have read a bit about how to build a wall, but I still don't quite understand how to protect the corners if the wall "turns." You can buy steel corner protectors, but I don't really get how to make these protectors invisible.

When I look online, it just says something like "corner protectors - plastered in," but won't that create a bulge on the wall?
 
Yes, it creates a bulge on the wall, but if you use a very wide spackle (preferably 30+ centimeters on both sides of the corner), it becomes minimally visible or not at all.
 
You should not have cut slices in the outer corners, but the chamfered edge. The actual corners of the protection will be level with the plasterboard, and when it's plastered, the wall will be completely smooth.

It doesn't work everywhere, but you should definitely plan to have the beveled edge towards the corner.
Otherwise, as Jesca says, it won't be noticeably visible.
