Considering whether you can use the plastic legs, but build two "runners" from wooden beams to anchor/stabilize the entire island with. What do you think about that?

But maybe that's not something to consider, is it?
The same applies as with all other plumbing installations, you can't have any hidden joints etc. so what would start leaking that you'd get so much water under the plinth?
 
No, you're right... :) All the plumbing connections are inside the cabinet. The only thing under the baseboard is the connection to the drain, but it would be strange if that started leaking!
 
I've decided to use studs now, it will probably be best after all!
I have some 2"2 and 2"4 at home, will be a little mix of them :)
