Hello!

I am wondering what kind of wood I might use if I am going to build a door from completely untreated wood. It is an exterior door that will not be surface-treated. Does anyone have a good suggestion?

Oak, Lärk, or Rödgran of high quality are quite durable types of wood.
 
The only types of wood I know that can survive completely without surface treatment are teak and pockenholz.
 
If there are things like canopies or anything else that protects against rain, then most things should work. Otherwise, a modern door is constructed so that what you see is not particularly much timber.
I assume you want it to turn gray, in that case, lärk is good. But keep in mind that graying requires the sun to do the job.
