What should you consider if you want to use branches for building with? For example, shelves, headboard, picture/mirror frame etc. Should you let them dry, how do you treat their surface, general tips and ideas are welcome. If anyone knows of any blogs about this, please let me know. Book recommendations? Link tips?

Start by splitting then drying. Then you'll experience a terrible lot of sawing, planing, and gluing depending on the thickness of the branches.

Okay, split and dry.
I assume I "debark" before drying?
Should the branches be surface-treated with some agent or do I oil them when they are dried?
 
It's just regular wood, so treat the surface in the same way: oil, varnish, paint, or nothing at all.
