I have an old front door that I am going to replace, and next to it, there is a side window that I want to remove. The door and the window go down through the house wall about 50cm. So I would need to brick up 50cm high and 40cm wide. What type of stone should I use for that? And what type of cement?
And I wonder if I should have something between the wooden frame and the wall, like tar paper or something?

Hmm. let's see if I got it right.... So you want to remove a window that is adjacent to an exterior door almost at ground level....
from what I see, it shouldn't be a problem... but, however, I think you don't need to put any stud between the new frame and the sealed window.... instead:
brick it up with concrete blocks, plaster its surface... Between the door frame and the concrete blocks, you can have regular insulation, plus you apply a silicone sealant on both sides.... then you just add the type of surface finish you want, like molding, reveal, or similar....
You can attach the frame at the top just like usual... but you use stone expanders in the concrete blocks...
