Align the wall during additional insulation?

Hello!
Wondering how to align the wall in the best way when adding external insulation?
We have an old house and are thinking of adding insulation and changing the panel,
we were considering "shimming" up the studs to make it straight and using a
straight edge. Is this the correct or best way, or how else do you get it straight?
Many thoughts on this..

That's a good way, the only "problem" is finding the highest point.
